Mälzen ist der Prozess, bei dem Getreidesamen gekeimt und dann ohne Pflanzenbildung getrocknet werden. Malteser wird für verschiedene Produkte dieses Prozesses verwendet: ▪ Samen, für die dieses Verfahren angewendet wurde, zB gemälzte Gerste. ▪ Maltose-basierter Zucker, "Biermalz", aus diesen Samen gewonnen. Malzsamen werden zur Herstellung von Bier, Whisky und Malzkreisen verwendet. Die Desinfektion von Samen verbessert Enzyme, die Stärke in Saatgut in Zucker verwandeln. Gerste ist aufgrund ihres hohen Enzymgehalts das häufigste Malz. Andere Getreidesamen können auch gemälzt werden, aber das resultierende Malz enthält möglicherweise nicht genug Enzym, um seine Stärke vollständig und wirksam zu machen.
