Malț

Malz ist ein Produkt, abgeleitet von gekeimten Getreidekörner, getrocknet und gemahlen, verwendet bei der Herstellung von Bier und Spirituosen oder geröstetem Kaffee in der Herstellung eines Surrogat. Es gibt zwei Arten von Malzextrakt: diastatisch und nicht-diastatisch. ▪ diastatische Malz enthaltenden alpha-Amylase als Diastase bezeichnet, die auf die Stärke einwirken es niedermolekulare Verbindungen, die für die Herstellung von Hefe als Nahrung dienen. Diastatische Malz kann nur hinzugefügt werden, wenn Mehl Teig in der Herstellung von Teig verwendet, die höheren Indexabfall von 250-300 sec hat. Wenn das Mehl einen Abfallindex von weniger als 220 Sekunden hat. Diastatikmalz ist schädlich. ▪ Nicht-diastatische Malz wird durch die gleiche Technologie wie diastatische Malz hergestellt, ist der einzige Unterschied, dass die Temperatur höher ist, so Amylase inaktiviert. Der nicht-diastatische Malzextrakt hat eine dunklere Farbe und einen starken Geruch.

Există două tipuri de extract de malț: diastatic și non diastatic. ▪ Malțul diastatic conține alfa amilază denumită și diastază, care acționează asupra amidonului transformându-l în compuși cu greutate moleculară mică ce servesc drept hrană pentru drojdie. Malțul diastatic se poate adăuga în aluat numai dacă făina utilizată la obținerea aluatului respectiv are indice de cădere mai mare de 250 - 300 sec. În cazul în care făina are un indice de cădere mai mic de 220 sec. folosirea malțului diastatic este dăunătoare. ▪ Malțul non-diastatic se obține prin aceeași tehnologie ca malțul diastatic, singura diferență este că temperatura de lucru este mai mare, astfel încât amilaza este inactivată. Extractul de malț non-diastatic are o culoare mai închisă și un miros mai puternic.
