Aliphatic hydrocarbons are organic chemical compounds composed of carbon and hydrogen and not aromatic. This makes them a subgroup of hydrocarbons. According to the IUPAC nomenclature, aliphatic compounds are "acyclic or cyclic, saturated or unsaturated carbon compounds, other than aromatic compounds." The simplest group of aliphatic hydrocarbons are the saturated alkanes; The saturated cycloalkanes and the unsaturated hydrocarbons of the alkenes and alkynes also belong to the group of aliphatics. Like all pure hydrocarbons, aliphatic hydrocarbons are non-polar, lipophilic compounds. Since, according to the IUPAC definition, aliphatic compounds are opposed to the aromatic carbon compounds and are thus defined by a negation, this means in reverse that all non-aromatic organic compounds are aliphatic. The classification of organic compounds in aliphatics and aromatics is based on the aromaticity criteria.

Aliphatische Kohlenwasserstoffe sind organische chemische Verbindungen, die aus Kohlenstoff und Wasserstoff zusammengesetzt und nicht aromatisch sind. Damit sind sie eine Untergruppe der Kohlenwasserstoffe. Nach der IUPAC-Nomenklatur sind aliphatische Verbindungen „acyclische oder cyclische, gesättigte oder ungesättigte Kohlenstoffverbindungen, außer aromatischen Verbindungen.“ Die einfachste Gruppe aliphatischer Kohlenwasserstoffe sind die gesättigten Alkane; weiterhin zählen die ebenfalls gesättigten Cycloalkane sowie die ungesättigten Kohlenwasserstoffe der Alkene und Alkine zur Gruppe der Aliphaten. Wie alle reinen Kohlenwasserstoffe sind aliphatische Kohlenwasserstoffe unpolare, lipophile Verbindungen. Da laut IUPAC-Definition aliphatische Verbindungen den aromatischen Kohlenstoffverbindungen gegenübergestellt und damit durch eine Negation definiert werden, bedeutet dies im Umkehrschluss, dass alle nicht aromatischen organischen Verbindungen aliphatisch sind. Die Klassifizierung organischer Verbindungen in Aliphaten und Aromaten erfolgt durch die Aromatizitätskriterien.
