Lipases are enzymes which cleave free fatty acids from lipids such as glycerides or cholesterol esters. These enzymes play an important physiological role by performing the fat digestion and making the fat reserves stored in the body so available. In addition, there are countless technological applications for these proteins. In the narrower sense, lipase refers to the pancreas-specific enteral lipase in medical diagnostics. Lipasen sind Enzyme, die von Lipiden wie Glyceriden oder Cholesterinestern freie Fettsäuren abspalten. Diese Enzyme spielen physiologisch eine wichtige Rolle, indem sie die Fettverdauung bewerkstelligen und die im Körper gespeicherten Fettreserven so verfügbar machen. Außerdem gibt es eine Unzahl technologischer Anwendungen für diese Proteine. Im engeren Sinn bezeichnet Lipase in der medizinischen Diagnostik die pankreasspezifische enterale Lipase.
