Minestrone is a rich vegetable soup from Italy. In the classic northern Italian variant, it consists of various vegetables such as cider vinegar, carrots, leeks, peas, tomatoes and potatoes, always also savoy cabbage and beans. Its powerful aroma is obtained by cooked, air-dried pancake, onions, garlic and the final addition of Parmesan. Meat broth is not used. For saturation, Minestrone also contains rice or noodles depending on the region, sometimes also roasted white bread slices. In Genoa it is prepared without bacon, but with aubergines, mushrooms and pesto. Further south, in the Abruzzi, Minestrone contains besides pork also Schweinskopf and turnips, white cabbage and lentils instead of savoy cabbage and beans. Minestrone ist eine gehaltvolle Gemüsesuppe aus Italien. In der klassischen, norditalienischen Variante besteht sie aus verschiedenen Gemüsen wie Staudensellerie, Karotten, Lauch, Erbsen, Tomaten und Kartoffeln, immer auch Wirsing und Bohnen. Ihr kräftiges Aroma erhält sie durch mitgekochten, luftgetrockneten Bauchspeck, Zwiebeln, Knoblauch und die abschließende Zugabe von Parmesan. Fleischbrühe wird nicht verwendet. Zur Sättigung enthält Minestrone zusätzlich je nach Region Reis oder Nudeln, manchmal auch geröstete Weißbrotscheiben. In Genua wird sie ohne Speck, aber mit Auberginen, Pilzen und Pesto zubereitet. Weiter südlich, in den Abruzzen, enthält Minestrone dagegen neben Speck auch Schweinskopf und Steckrüben, Weißkohl und Linsen anstelle von Wirsing und Bohnen.
