Xanthan is a naturally occurring polysaccharide. It is obtained from sugary substrates by means of bacteria of the genus Xanthomonas and is used as thickening and gelling agent as a food additive with the E number E 415. Xanthan is approved for eco-food. Xanthan can not be metabolized by the human organism and is therefore counted as a dietary fiber. In the intestine it is partially degraded by microorganisms living there. In high doses it can have a laxative effect. However, Xanthan is considered harmless to health.

Xanthan ist ein natürlich vorkommendes Polysaccharid. Es wird mit Hilfe von Bakterien der Gattung Xanthomonas aus zuckerhaltigen Substraten gewonnen und wird als Lebensmittelzusatzstoff mit der E-Nummer E 415 als Verdickungs- und Geliermittel eingesetzt. Xanthan ist für Öko-Lebensmittel zugelassen. Xanthan kann vom menschlichen Organismus nicht metabolisiert werden und wird daher zu den Ballaststoffen gezählt. Im Darm wird es teilweise von dort lebenden Mikroorganismen abgebaut. In hohen Dosen kann es abführend wirken. Xanthan gilt dennoch als gesundheitlich unbedenklich.
