Pan

Bread is a staple food that is part of the traditional diet in Europe, the Middle East, India and America. It is usually prepared by baking a dough, made mainly with cereal flour, salt and water. The mixture, in most cases, usually contains yeasts to make the dough fertile and more spongy and tender. The most commonly used cereal for making bread is wheat flour. Rye, barley, maize and rice are also used. There are many types of bread that may contain other ingredients, such as fats of different types, eggs, sugar, spices, fruits, dried fruits, vegetables, nuts or various seeds. The addition of the yeast causes the fermentation of the dough before baking, and as a consequence gives it a volume and a spongyness due to the production of small bubbles of carbon dioxide that remain immersed between the damp mass of the flour. To bread made without the use of yeast, it is called unleavened bread, and therefore lacks the typical spongyness of "swollen" or "levados" breads. Existen muchos tipos de pan que pueden contener otros ingredientes, como grasas de diferentes tipos, huevos, azúcar, especias, frutas, frutas secas, verduras, frutos secos o semillas diversas. La adición de la levadura provoca la fermentación de la masa antes del horneado, y como consecuencia, le proporciona un volumen y una esponjosidad debido a la producción de pequeñas burbujas de dióxido de carbono que se quedan inmersas entre la masa húmeda de la harina. Al pan elaborado sin el empleo de levadura, se le llama ácimo, y por ello carece de la esponjosidad típica de los panes "hinchados" o "levados".
