Ventresca
Ventresca is the most precious part of red tuna, which is normally consumed fresh or packed in olive oil. The tonsillate of the tuna is obtained from the fattest part of the animal, the one that envelops the abdominal cavity: the muscle bundles are woven into fat and make the meat softer and tasty. In the plates of the Trapanese kitchen is highly appreciated, it is called surra and is consumed strictly on the grate or on the plate, so that excess fat can dissolve. The preserved is pink but lighter than the classic canned tuna, and is still produced today in Trapani, in the province of Reggio Calabria and Sardinia. In recent years, several companies produce cans of bluefin tuna or of the less valuable yellow fin tuna. The top of the tuna ventresca is often called mosciame.
