Definition of 락교절임 in the Korean dictionary
It is a type of pickled Japanese pickles. Sweet pickles of pickles. It is said to be called "Flower Rakyogyo" and it is bottled. It is saved by salt splitting and finishing with sweet vinegar at appropriate time. Raw material is a little longer stalk, leaves and roots are cut off, 100kg salt, 14kg salt, 40ℓ in order to make a salt slice. Cover lightly with light. Lactic acid fermentation is carried out in salting to produce suitable acid. 락교절임 일본 침채류의 일종이다. 염교의 감미식초절임. 소립의 것은 꽃락교라고 칭하여 병조림한다.소금절이하여 저장하였다가 적당한 때에, 감미식초로 마무리 담그기로 한다. 원료 염교는 줄기를 조금 길게 하고 잎과 뿌리를 잘라 버리고 염교 100kg, 식염 14kg, 차수 40ℓ의 배합으로 소금절이로 한다. 덮개와 가벼운 중석을 한다. 염장 중에 젖산발효를 하여 적당한 산이 생성된다.
