Le lait soufflé est un produit alimentaire produit à partir de l'acidification du lait. Ce n'est pas le même que le lait gâté qui est devenu mauvais naturellement et qui peut contenir des toxines. Aux États-Unis, les acides utilisés pour fabriquer du lait acidifié comprennent l'acide acétique, l'acide adipique, l'acide citrique, l'acide fumarique, la glucono-delta-lactone, l'acide chlorhydrique, l'acide lactique, l'acide malique, l'acide phosphorique, l'acide succinique et l'acide tartrique. Le lait soufflé est généralement fabriqué à la maison ou vendu et consommé en Europe, en particulier en Europe de l'Est, en Allemagne et en Scandinavie.
