La gomme adragante est une gomme naturelle obtenue à partir de la sève séchée de plusieurs espèces de légumineuses moyen-orientales du genre Astragalus, y compris A. adscendens, A. gummifer, A. brachycalyx et A. tragacanthus. Certaines de ces espèces sont connues collectivement sous les noms communs «épine de chèvre» et «locoweed». La gomme est parfois appelée gomme de Shiraz, Shiraz, Gomme de Gomme ou Gomme. Le nom dérive de tragos et d'akantha, ce qui signifie en grec "chèvre" et "épine", respectivement. L'Iran est le plus grand producteur de la meilleure qualité de cette gomme. La gomme de gomme adragante est un mélange de polysaccharides visqueux, inodore, insipide et hydrosoluble obtenu à partir de la sève qui est évacuée de la racine de la plante et séchée. La gomme s'écoule de la plante dans des rubans torsadés ou des flocons qui peuvent être en poudre. Il absorbe l'eau pour devenir un gel qui peut être agité dans une pâte. La gomme est utilisée dans le travail du cuir tanné aux légumes comme un mélange bordant et brunissant, et est occasionnellement utilisé comme raidisseur dans les textiles. L'alcaloïde qu'il contient a été historiquement utilisé comme remède à base de plantes pour des conditions telles que la toux et la diarrhée.
