Fermentation

Fermentation or fermentation in biology is a form of enzymatic conversion of organic substances. Fermentation is deliberately applied in biotechnology. This is done either by adding the necessary enzymes or by adding bacterial, fungal or other biological cell cultures which carry out the fermentation within the framework of their enzyme-catalyzed metabolism. Partially, these microorganisms are already naturally present on the starting materials, for example in the case of spontaneous hardening. However, in the industrial fermentation, pure cell cultures are added in order to better control the fermentation and to exclude undesirable by-products. Fermentation oder Fermentierung bezeichnet in der Biologie eine Form von enzymatischer Umwandlung organischer Stoffe. Die Fermentation wird in der Biotechnologie bewusst angewendet. Dies geschieht entweder durch Zugabe der benötigten Enzyme oder durch Zugabe von Bakterien-, Pilz- oder sonstigen biologischen Zellkulturen, die die Fermentation im Rahmen ihres enzymkatalysierten Stoffwechsels ausführen. Teilweise sind diese Mikroorganismen bereits natürlich auf den Ausgangsstoffen vorhanden, etwa bei der Spontangärung. Dennoch werden gerade in der industriellen Fermentation Reinzuchtzellkulturen zugegeben, um die Fermentation besser zu kontrollieren und unerwünschte Nebenprodukte auszuschließen.
