Vanillin is the main ingredient of the natural vanilla extract, a mixture of several hundred different compounds. Due to the scarcity and cost of natural vanilla extract, there have long been synthetic methods of preparation for vanillin. The first commercial synthesis of vanillin began with the more readily available natural substance eugenol.
