Estructura de la molécula de amilosa Estructura de la molécula de amilopectina Almidón o amilo es un carbohidrato que consiste en un gran número de unidades de glucosa unidas por enlaces glucosídicos. Este polisacárido es producido por la mayoría de las plantas verdes como almacén de energía. Es el carbohidrato más común en las dietas humanas y está contenido en grandes cantidades en alimentos básicos tales como patatas, trigo, maíz, arroz y yuca.
