Un défaut ou un défaut de vin est une caractéristique désagréable d'un vin résultant souvent de mauvaises pratiques de vinification ou de conditions de stockage et entraînant une détérioration du vin. Beaucoup de composés qui causent des défauts de vin sont déjà naturellement présents dans le vin mais à des concentrations insuffisantes pour l'affecter négativement. En fait, selon la perception, ces concentrations peuvent donner des caractères positifs au vin. Cependant, lorsque la concentration de ces composés dépasse largement le seuil sensoriel, ils remplacent ou obscurcissent les arômes et les arômes que le vin exprime. En fin de compte, la qualité du vin est réduite, ce qui rend moins attrayant et parfois imbibable.
