Feta

Feta - fromage des Balkans. Traditionnellement, des produits similaires sont produits en Grèce, en Albanie et en Bulgarie et, depuis le 14 octobre 2002, le nom "feta" est protégé et réservé exclusivement aux fromages originaires de Grèce. Le fromage Feta est fabriqué à partir d'un mélange de lait de brebis pasteurisé avec du lait de chèvre ou du lait de brebis uniquement. Il est interdit d'utiliser des conservateurs ou des colorants, la maturité doit être d'au moins 3 mois, les exigences techniques détaillées et les qualifications du personnel ont été réglementées par la loi en Grèce et soumises à des contrôles fréquents. Il appartient au groupe des fromages à pâte molle avec une teneur en matière grasse d'environ 40%. C'est un fromage croquant, qui fond bien à haute température. La feta est un fromage très faux. Selon les données du ministère grec de l'Agriculture, le marché mondial des ventes de fromage Feta atteint 400 à 500 000 tonnes, tandis que la Grèce n'a exporté que 89 000 tonnes en 2003.

Ser feta jest produkowany z mieszanki pasteryzowanego mleka owczego z mlekiem kozim lub tylko z mleka owczego. Niedozwolone jest używanie środków konserwujących lub koloryzujących, okres dojrzewania wynosić musi co najmniej 3 miesiące, szczegółowe wymogi technologii i kwalifikacje personelu zostały w Grecji prawnie unormowane i podlegają częstej kontroli. Należy do grupy serów miękkich o zawartości tłuszczu ok. 40%. Jest serem kruchym, dobrze topiącym się w wysokiej temperaturze. Feta jest serem bardzo chętnie podrabianym. Według danych greckiego ministerstwa rolnictwa światowy rynek sprzedaży sera Feta osiąga 400-500 tysięcy ton, podczas gdy Grecja eksportowała go w roku 2003 jedynie 89 tysięcy ton.
