Pulque 'pulke é uma bebida alcoólica feita a partir da seiva fermentada da planta de maguey. É tradicional no México central, onde foi produzido por milênios. Tem a cor do leite, uma consistência um tanto viscosa e um gosto semelhante ao fermento. A história da bebida se estende muito para o período mesoamericano, quando considerada sagrada, e seu uso foi limitado a certas classes de pessoas. Após a Conquista espanhola do México, a bebida tornou-se secular e o consumo aumentou. O consumo de pulque atingiu seu pico no final do século XIX. No século 20, a bebida caiu em declínio, principalmente devido à concorrência da cerveja, que se tornou mais prevalente com a chegada de imigrantes europeus. Há alguns esforços para revivir a popularidade da bebida através do turismo.
