Pe lângă caroten, xantofilele sunt al doilea grup important de carotenoizi. La fel ca carotenii, xantofilele sunt de obicei tetraterpene, dar conțin grupuri care conțin oxigen sub formă de grupări hidroxi, carbonil și carboxi, și mai rar, de asemenea, de grupări oxiran.

Xanthophylle sind neben den Carotinen die zweite wichtige Gruppe der Carotinoide. Die Xanthophylle sind – ähnlich wie die Carotine auch – meist Tetraterpene, enthalten aber sauerstoffhaltige Gruppen in Form von Hydroxy-, Carbonyl- und Carboxygruppen sowie seltener auch von Oxirangruppen.
