Astringent
O substanță astringentă este un compus chimic care tinde să se micsoreze sau să contracte țesuturile organismului. Cuvântul "astringent" derivă din limbajul adstringere latin, adică "legarea rapidă". Două exemple comune sunt lotiunea de calamină și vrăjitorul de căpșuni. Astringența este, de asemenea, senzația de gură uscată, provocată de taninuri găsite în multe fructe, cum ar fi căpșunul, aronia chokeberry, chokecherry, cireșul de pasăre, fructele de gutui și de curcumin și pielea de banane. Taninurile leagă proteinele salivare, făcându-le să precipite sau agregate și să ducă la o senzație de "nisip" sau senzație uscată în gură. Taninurile se găsesc în unele vinuri și ceaiuri roșii. O cantitate mică de astringență este așteptată în unele vinuri, în special vinurile roșii tinere din struguri cum ar fi cabernet sauvignon și merlot.
