Coacerea este o metodă de gătit alimentară care utilizează căldură uscată prelungită prin convecție, mai degrabă decât prin radiații termice, în mod normal într-un cuptor, dar și în cenușă caldă sau pe pietre fierbinți. Cel mai obișnuit articol de panificație este pâinea, dar multe alte tipuri de alimente sunt coapte. Căldura este transferată treptat "de pe suprafața prăjiturilor, a prăjiturilor și a pâinii în centrul lor. Căldura prin care se transformă băuturile și aluatele în produse coapte cu o crustă uscată și un centru mai moale". Coacerea poate fi combinată cu grătarul pentru a produce o variantă hibridă de grătar folosind ambele metode simultan sau una după alta. Coacerea este legată de grătar, deoarece conceptul cuptorului de zidărie este similar cu cel al unei găuri de fum. Din cauza rolurilor sociale și familiale istorice, coacerea a fost efectuată, în mod tradițional, la domiciliu de către femei pentru consumul casnic și de bărbați în brutării și restaurante pentru consum local. Când producția a fost industrializată, coacerea a fost automatizată de mașini în fabrici mari. Arta de coacere rămâne o abilitate fundamentală și este importantă pentru alimentație, deoarece produsele de panificație, în special pâinea, sunt o hrană importantă, dar comună, atât din punct de vedere economic, cât și cultural.
