Botifarra or butifarra in Spanish or Catalan is a typical sausage stuffed with the Catalonian cuisine in Spain. It is prepared with fresh pork and with a lot of pepper as well as other spices. Being born in Catalonia, however, there are variations of this stuff in the Balearic Islands, Valencia region, Murcia, Chiclana de la Frontera and even in Uruguay and Colombia, in the American continent. Also in Azaruja there is botifarra, which derives from a small diaspora of Catalan families to this locality of the county of Évora, and that besides the botifarras there left other gastronomic traditions like the cod of "alhióli", and several "tortilhas", potato among others. White botifarras There are two main variants: ▪ black botifarra: prepared with lean meats, fats and pig's blood ▪ white botifarra: prepared only with lean meats ...
