Invertase

Invertase is an enzyme. It catalyzes the hydrolysis of sucrose into fructose plus glucose, usually in the form of an inverted sugar syrup. For industrial use, invertase is commonly obtained from yeasts. It is also synthesized by bees, which use it to make honey from the nectar. Invertase is expensive, so when fructose is required, it may be preferable to make it from glucose using glucose isomerase. Invertase é uma enzima. Ela catalisa a hidrólise da sacarose em frutose mais glicose, geralmente na forma de xarope de açúcar invertido. Para o uso industrial, a invertase é comumente obtida de leveduras. É sintetizada também por abelhas, as quais a utilizam para fazer o mel a partir do néctar. A invertase é cara, então quando é necessária frutose, pode ser preferível fazê-la a partir da glicose utilizando a glicose isomerase.
