Conche
Une conche est un mélangeur et un agitateur de raclage de surface qui répartit uniformément le beurre de cacao dans le chocolat et peut agir comme un «polisseur» des particules. Il favorise également le développement de la saveur par la chaleur frictionnelle et la libération de substances volatiles et acides et l'oxydation. Il existe de nombreuses conceptions de conches, et les scientifiques de l'alimentation étudient encore précisément ce qui se passe pendant la conque et pourquoi. Le nom provient de la forme des vaisseaux initialement utilisés, qui ressemblaient à des coquilles de conque. Lorsque les ingrédients sont mélangés de cette façon, parfois jusqu'à 78 heures, le chocolat peut être produit avec un goût doux et riche. Le chocolat de qualité inférieure est concheté pour six heures seulement. Étant donné que le processus est si important pour la texture finale et la saveur du chocolat, les fabricants conservent les détails de leur processus de conching. En 1879, Rodolphe Lindt a inventé le "conche" à Berne, en Suisse. Il a produit du chocolat avec des caractéristiques supérieures d'arôme et de fusion par rapport aux autres procédés utilisés à cette époque. La légende raconte que Lindt a laissé à tort un mélangeur contenant du chocolat pendant la nuit.
