Pre-ferment
Un pre-ferment este un starter de fermentație utilizat în procesul de fabricare a pâinii și este denumit o metodă indirectă. Poate fi numit și aluatul mamei. O fermentare prealabilă și o fermentare mai lungă în procesul de fabricare a pâinii au mai multe avantaje: există mai mult timp pentru drojdie, enzime și, în cazul în care sourdough, acțiuni bacteriene asupra amidonului și a proteinelor din aluat; acest lucru la rândul său îmbunătățește timpul de păstrare a pâinii coapte și creează complexități mai mari de aromă. Deși preferințele au scăzut în popularitate, adăugările directe de drojdie în rețetele de paine au simplificat procesul la nivel comercial, pre-fermentări de diferite forme sunt utilizate pe scară largă în rețetele și formulele de pâine artizanală.
