Safrolul, cunoscut și ca shikimol, este o fenilpropenă. Este un lichid uleios incolor sau ușor galben tipic extras din coaja de rădăcină sau din fructul plantelor de sassafras sub formă de ulei de sassafras sau este sintetizat din catechol sau alți compuși metilendioxi înrudiți. Este componenta principală a uleiului brun de camfor și se găsește în cantități mici într-o mare varietate de plante, unde funcționează ca un pesticid natural. Uleiul de cocar din Ocotea, fabricat din Ocotea pretiosa, o planta crescândă în Brazilia, și uleiul de sassafras din Sassafras albidum, un copac în creștere în estul Americii de Nord, sunt principalele surse naturale pentru safrol. Are o aromă caracteristică "dulce-magazin". Este un precursor al sintezei insecticidului piperonil butoxid de insecticid, aroma piperonal prin izosafrol și medicamentul empatogene / entactogenic MDMA.
