Sok

Saft - das erhaltene Produkt mit gesunder, reift, frisch oder Lagerung von Obst oder Gemüse, von einer oder mehrere Spezies mit einer Farbe, Geschmack und Geruch charakteristisch für Saft aus Obst oder Gemüse, von dem der Lage, Gärung, jedoch nicht gegorenen. Säfte können in dem Prozess des Verdichtens den Saft oder Püree und Wiederherstellung von Aroma und gegebenenfalls die Pulpe aus dem Saft, aber in dem Verfahren zurückgewonnen entfernt wird entfernt, indem die Wiederherstellung der Wasseranteil aus konzentriertem Saft oder Püree hergestellt werden. Nie wolno dodawać żadnych substancji poprawiających smak, barwę lub konsystencję soku. Barwa, smak i aromat soku musi pochodzić z owoców lub warzyw, z których sok został otrzymany. W przepisach restrykcyjnie określono ilość i rodzaj dozwolonych dodatków do soków; tj. witamin, soli mineralnych, kwasów spożywczych. Do wszystkich soków owocowych oraz pomidorowego zabroniony jest dodatek cukrów.
