Vainilla
La vainilla es un sabor derivado de orquídeas del género Vanilla, principalmente de la especie mexicana, de vainilla de hojas planas. La palabra vainilla, derivada del diminutivo de la palabra española vaina, simplemente se traduce como vaina pequeña. El pueblo mesoamericano precolombino cultivó la vid de la orquídea de vainilla, llamada tlilxochitl por los aztecas, y al conquistador español Hernán Cortés se le atribuye la introducción de vainilla y chocolate en Europa en la década de 1520. Los intentos iniciales de cultivar la vainilla fuera de México y Centroamérica resultaron inútiles debido a la relación simbiótica entre la orquídea vainilla y su polinizador natural, las especies locales de la abeja Melipona. La polinización se requiere para fijar la fruta de la cual se deriva el condimento. En 1837, el botánico belga Charles François Antoine Morren descubrió este hecho y fue pionero en un método de polinización artificial de la planta. El método resultó financieramente inviable y no se desplegó comercialmente. En 1841, Edmond Albius, un esclavo que vivía en la isla francesa de Reunión en el Océano Índico, descubrió a la edad de 12 años que la planta podía ser polinizada a mano.
