Malt
Le malt est des grains de céréales germés qui ont été séchés dans un procédé connu sous le nom de «maltage». Les grains sont faits pour germer en trempant dans l'eau, et sont ensuite arrêtés de germer encore en séchant à l'air chaud. Les grains de maltage développent les enzymes nécessaires pour modifier les amidons du grain dans des sucres, y compris le monosaccharide glucose, le disaccharide maltose, le trisaccharide maltotriose et les sucres supérieurs appelés maltodextrines. Il développe également d'autres enzymes, telles que les protéases, qui décomposent les protéines dans le grain en formes qui peuvent être utilisées par la levure. Le malt contient également de petites quantités d'autres sucres, tels que le saccharose et le fructose, qui ne sont pas des produits de la modification de l'amidon mais qui étaient déjà dans le grain. Le grain malté sert à fabriquer de la bière, du whisky, des shakes maltés, du vinaigre de malt, des confiseries telles que Maltesers et Whoppers, des boissons aromatisées telles que Horlicks, Ovaltine et Milo, et des produits de boulangerie tels que des malles de malt, des bagels et des biscuits riches en thé. Le grain malté qui a été broyé dans un plat grossier est connu sous le nom de «repas sucré». Divers céréales sont maltées, bien que l'orge soit la plus courante.
