Vanille
Vanille ist ein Geschmack aus Orchideen der Gattung Vanille, vor allem aus der mexikanischen Art, flachblättrige Vanille. Das Wort Vanille, abgeleitet aus dem Diminutiv des spanischen Wortes Vaina, übersetzt einfach so wenig Pod. Präkolumbianische Mesoamerikaner kultivierten die Rebe der Vanille-Orchidee, genannt tlilxochitl von den Azteken, und der spanische Konquistador Hernán Cortés wird mit der Einführung von Vanille und Schokolade nach Europa in den 1520er Jahren gutgeschrieben. Erste Versuche, Vanille außerhalb Mexikos und Mittelamerikas zu kultivieren, erwiesen sich als vergeblich wegen der symbiotischen Beziehung zwischen der Vanille-Orchidee und ihrem natürlichen Bestäuber, der lokalen Spezies der Melipona-Biene. Bestäubung ist erforderlich, um die Früchte, aus denen das Aroma abgeleitet ist gesetzt. Im Jahre 1837 entdeckte der belgische Botaniker Charles François Antoine Morren diese Tatsache und entwickelte eine Methode zur künstlichen Bestäubung der Pflanze. Die Methode erwies sich als finanziell undurchführbar und wurde nicht kommerziell eingesetzt. Im Jahre 1841 entdeckte Edmond Albius, ein Sklave, der auf der französischen Insel Réunion im Indischen Ozean lebte, im Alter von 12 Jahren, dass die Pflanze handbestäubt werden könnte.
