Existe nos dois enantiómeros D - arabinose e L - arabinose. O arabinose às vezes é referido como açúcar de pectinose, de goma ou de aloína. Arabinose não pode ser fermentado de fermento comum. Em 2005, pesquisadores da Universidade de Goethe, em Frankfurt am Main, conseguiram modificar as culturas de fermento de forma a que também possam fermentar arabinose e xilose em etanol. A forma L ocorre com mais frequência nos géneros alimentícios, geralmente como um bloco de construção em cadeias de polissacarídeos no reino vegetal. A forma D foi detectada como um componente de um polissacarídeo em bacilos de tuberculose.

Die D-Form wurde als Bestandteil eines Polysaccharids in Tuberkulose-Bazillen nachgewiesen.
