Chocolate i / tʃɒklət / este un preparat tipic dulce, de obicei maro, preparat din semințe de cacao Theobroma, prăjită și măcinată, adesea aromatizată, ca și în cazul vaniliei. Se face sub formă de lichid, pastă sau într-un bloc sau se folosește ca ingredient aromatizant în alte alimente dulci. Cacao a fost cultivat de mai multe culturi timp de cel puțin trei milenii în Mexic și America Centrală. Cele mai vechi dovezi de utilizare a urmei la Mokaya, cu dovezi de băuturi de ciocolată datând din 1900 î.Hr. De fapt, majoritatea locuitorilor din zona mezoamericană a făcut băuturi din ciocolată, inclusiv Mayanii și Aztecii, care au transformat-o într-o băutură cunoscută sub numele de xocolātl, un cuvânt Nahuatl care înseamnă "apă amară". Semințele copacului de cacao au un gust amar intens și trebuie fermentate pentru a dezvolta aroma. După fermentație, fasolea este uscată, curățată și prăjită. Carapacea este îndepărtată pentru a produce nisipuri de cacao, care sunt apoi măcinate la masa de cacao, ciocolată pură în formă brută. Deoarece masa de cacao este de obicei lichefiată înainte de a fi turnată cu sau fără alte ingrediente, se numește lichid de ciocolată.
