Une stomie ou une ouverture de fente est un pore dans l'épiderme des plantes. La stomie est généralement formée par deux cellules en forme de haricots, les cellules de fermeture. Si on ajoute les cellules qui se trouvent autour des cellules de fermeture, on parle de l'appareil d'ouverture de l'espace ou du complexe stomatique. Alors que les cellules épidermiques ne contiennent pas de chloroplastes, les chloroplastes se trouvent dans les cellules de fermeture différenciées. Les stomates régulent l'échange gazeux de l'installation avec l'air ambiant. En général, c'est la libération d'oxygène et d'eau, ainsi que l'absorption du dioxyde de carbone. Indépendamment du type de plante et de l'adaptation aux conditions particulières du site, l'ouverture et la fermeture des stomates sont effectuées selon le même mécanisme. Les stomates se trouvent dans la plupart des plantes dans l'épiderme inférieur des feuilles, dans le cas des graminées sur les deux côtés des feuilles, et dans le cas des plantes feuillues, uniquement du côté de la feuille. Des stomates se trouvent également dans l'épiderme des pousses et des pétales, mais jamais des racines.

Zählt man die Zellen, die um die Schließzellen herum liegen, noch hinzu, spricht man vom Spaltöffnungsapparat oder stomatären Komplex. Während die Epidermiszellen keine Chloroplasten enthalten, befinden sich in den ausdifferenzierten Schließzellen Chloroplasten. Die Stomata regulieren den Gasaustausch der Pflanze mit der Umgebungsluft. Im Allgemeinen handelt es sich dabei um die Abgabe von Sauerstoff und Wasser, sowie die Aufnahme von Kohlenstoffdioxid. Unabhängig von Pflanzentyp und der Anpassung an besondere Standortbedingungen erfolgt das Öffnen und Schließen der Stomata nach dem gleichen Mechanismus. Die Stomata befinden sich bei den meisten Pflanzen in der unteren Epidermis der Blätter, bei Gräsern auf beiden Blattseiten und bei Schwimmblattpflanzen nur auf der Blattoberseite. Stomata sind auch in der Epidermis von Sprossachsen und Blütenblättern zu finden, jedoch nie an Wurzeln.
