Séchage
Le séchage est un processus de transfert de masse consistant en l'élimination de l'eau ou d'un autre solvant par évaporation à partir d'un solide, semi-solide ou liquide. Ce processus est souvent utilisé comme étape de production finale avant la vente ou les produits d'emballage. Pour être considéré comme «séché», le produit final doit être solide, sous la forme d'une feuille continue, de pièces longues, de particules ou de poudre. Une source de chaleur et un agent pour éliminer la vapeur produite par le procédé sont souvent impliqués. Dans les bioproduits comme les aliments, les céréales et les produits pharmaceutiques comme les vaccins, le solvant à éliminer est presque toujours l'eau. Dans le cas le plus courant, un courant de gaz, par exemple l'air, applique la chaleur par convection et emporte la vapeur sous forme d'humidité. D'autres possibilités sont le séchage sous vide, où la chaleur est fournie par la conduction ou le rayonnement, tandis que la vapeur ainsi produite est éliminée par le système de vide. Une autre technique indirecte est le séchage en tambour, où une surface chauffée est utilisée pour fournir l'énergie et les aspirateurs tirent la vapeur à l'extérieur de la pièce. En revanche, l'extraction mécanique du solvant, par exemple l'eau, par centrifugation, n'est pas considérée comme "séchage" mais plutôt "vidange".
