Mischbarkeit ist ein Begriff, der in der Chemie verwendet wird, der sich auf die Eigenschaft von einigen Flüssigkeiten bezieht, um in irgendeinem Verhältnis gemischt zu werden und eine Lösung zu bilden. Grundsätzlich gilt der Begriff auch auf andere Phasen, wird aber öfter verwendet, um sich auf die Löslichkeit einer Flüssigkeit in einem anderen zu beziehen. Wasser und Ethanol sind zum Beispiel in jedem Verhältnis mischbar. Im Gegenteil, Substanzen sollen nicht mischbar sein, wenn sie nicht in der Lage sind, eine homogene Phase zu bilden. Zum Beispiel ist Ethylether in gewissem Maße in Wasser löslich, aber diese beiden Lösungsmittel werden nicht als mischbar angesehen, da sie in allen Proportionen nicht löslich sind. In organischen Verbindungen bestimmt der Gewichtsprozentsatz der Kohlenwasserstoffkette oft die Mischbarkeit der Verbindung mit Wasser. Beispielsweise hat Ethanol unter Alkoholen zwei Kohlenstoffatome und ist mit Wasser mischbar, wohingegen 1-Octanol nicht ist. Dies ist auch bei Lipiden der Fall; Die langen Ketten, die die Lipide charakterisieren, sind der Grund, dass diese fast immer mit Wasser nicht mischbar sind. Ähnliches passiert auch mit anderen funktionellen Gruppen.

En los compuestos orgánicos, el porcentaje del peso de la cadena de hidrocarburos con frecuencia determina la miscibilidad del compuesto con agua. Por ejemplo, entre los alcoholes, el etanol tiene dos átomos de carbono y es miscible con agua, mientras que el 1-octanol no lo es. Este es también el caso de los lípidos; las largas cadenas que caracterizan a los lípidos son la causa de que estos casi siempre sean inmiscibles con agua. Algo similar ocurre con otros grupos funcionales.
